Will this receiver work with 8 ohm speakers even though all the ratings are for 6 ohm speakers? If so, what will the power (wattage) ratings be at 8 ohm loads?
Yes it will work with any load that is 6 ohms or higher. Sherwood does not specify output into 8 ohms, although it will not be vastly lower than at 6 ohms.

We want to watch one program. I want to use wire less head set and my wife wants to hear it with 7.1? same room & same program.
A yes or no answer please, as I do not understand the technical answer that was given.
Yes, You may certainly use the second zone for your headphones while the 7.1 is also operating.

Yes this does allow simultanious playback of two different sources on both zones.

If you connect to the video input,or component input will the signal be output via the HDMI monitor jack,,,can I use just one HDMI out?
Unfortunately this receiver does not support video scaling so only the corresponding input will work with the monitor output. IE: Only the HDMI inputs will work with the HDMI monitor out, same for composite and component video.
