Does the veneer match other PE cabinets?
I'm thinking of grabbing four of the 0.25 ft^3 curved maple cabs (linked below) and making some matching subs. These would work, but I want to be sure the finish would be the same - it's difficult to tell from the photos.http://www.parts-express.com/pe/pshowdetl.cfm?&Partnumber=302-707&scqty=2
These all come from the same supplier so the only difference in the finish will be the variance in the natural veneer itself.

Cabinet with two 10" Sub

They will have to be suitable for a small sealed enclosure (about .5 cubic feet each) and mounted on the top and bottom panels in order for this to work.

As is, does this cabinet have adequate sealing between the baffles and the cabinet or should I use additional measures to ensure a good seal?
Yes, the baffles don't just sit on those little wedges and the rim on the backside but actually have a profile which fits in to the cavity but also overlaps the outside ridge of the box for a complete seal.When I put mine together with the driver and the amp, I chose to seal the front panel with some glue but looking back at it I do not believe it would be necessary.Have fun, it's a great box.
