Dayton Audio CS622C 6-1/2" Stereo Ceiling Speaker
I'm looking to install one of these speakers in a small bathroom. The space above is attic. I was planning to build an enclosure. Do you have any recommendations on enclosure volume/size to be consist with the designed frequency response. Thank you.
There is no reason to build an enclosure behind the speaker, these are designed to be used infinite baffle (IB) and you will get smoother bass response with no chamber.

How do you remove the grille on this speaker?
The grill on this speaker pops off with the supplied tool or small flat headed screw driver. Simply pry up around the edge until it comes free.

Wiring with Lepai LP-2020A+ ?
I am new to the concept of single stereo speakers and want to make sure that this speaker could be wired up to the LP-2020A+ amp by simply connecting each channel to the correct terminals on the speaker.
Yes this is correct, wire each set of terminals to the outputs on the amplifier.

Wiring 4 to one volume control
I'd like to wire 4 of these in my basement into one volume control knob. How is this done with this speaker? I see two sets of terminals on each speaker. So does that act as an input and output?
This is actually a dual channel or stereo speaker. It is intended to be fed both the right and left channel signal at the same time. There are some different ways to wire this type of thing up, but the type of volume control will have an impact on how to wire it correctly.

How would I wire two of these to a stereo amplifier?
I would like to install two of these in a lobby connected to a DTA-100a. How would I wire the (4) terminals so that I don't present an unsustainable load to the speakers while still maintaining the stereo signal at both locations? Secondarily, is the DTA-100a a good choice for this application?
There is no easy way to wire these for stereo sound using that amplifier. Your best option is to use something like the Topping TP20 or TP21 and wire each speaker in parallel on each channel for a 4 ohm load to the amp.
