Can i use the same color jacks ( 2 white jacks) to replace red/white jacks on my car amplifier?
These have a black and red stripe on them. The white is just an insulator to keep them from shorting on the chassis. The colors are not really important except to tell the difference between channels.

hello. I need to replace the RCA female, inputs on a pair of McIntosh MC60 vintage tube amps. I just want to make sure that the connectors are insulated as they will mount directly to the steel chassis. Do you know if these are the right product?
Yes these are insulated for metal chassis mounting.

Yep. In my case, I don't really need it but then the actual dimensions of the cut out for the threaded section isn't really specified. The diameter given on the page assumes you will be using the insulator. It is entirely debateable whether insulation should be used, in general. Grounding is a dark art that frequently defies rational explanation.
